Hello, World

      My name is Josiah Colby, and I am a student at Pacific Lutheran University. I grew up on the south end of Whidbey Island, in the northern Puget Sound. I am a huge baseball nut. My favorite teams are the Seattle Mariners, 
as I live near them, and the Chicago Cubs, as they were my Father's and Grandfather's favorite ballclubs. The 2016 World Series was absolutely extraordinary, and my family went nuts when they finally broke the 108 year curse!


I also am an avid gamer. I play League of Legends, Destiny 2, and various Nintendo titles. My favorite recent release was Super Mario Odyssey, due to the masterful game design, and how the game drew me into its vast world. 

 I am looking forward to getting to know the rest of y'all!

Fear Factor and Food Where Do we Draw the Line? Introduction: In my Food and Communication class, we discussed how various cultures define what is "edible." In the U.S., we think lobsters and crabs are edible but spiders sure as heck are not, even though they all come from the arachnid family and are close cousins. Spiders and crabs aren't all that different, and yet one is a fine cuisine and the other is seen as the nastiest of nasty. In this post, I would like to explore the idea of "edible" vs. "inedible," particularly from the perspective of U.S. citizens, and look into why we have such strong aversions to foods that are commonly ate in other cultures. Butter, Local Foods, and the French Paradox - Why caring about our food is critical for the future.

What are the main foods you think of in relation to the American Diet? Sugary drinks, packaged pastries, and fast food, like the chicken nugget , are probably what comes to mind. The main ingredients for this diet, thanks to government subsidies, has fostered an environment where people eat fast food to stretch their dollar. This same environment led to Dr. Eckstein asking the class if it is more expensive to eat locally and prepare your own foods, or to eat out. I was one of the only students to say that it is more cost effective to eat locally, and to prepare your own food; this is probably because I live on Whidbey Island , a foodie's paradise. Specifically, I live on the South End  of the island, where there is only one fast food establishment, a Dairy Queen, and this DQ is ridiculously expensive (It costs $10.00 for a chicken strip basket, the least expensive item on the menu is $1.50, for a kids ice cream cone, and the cheapest food item is $3.99).
